Zoodle Casserole

This is a dish that I bring to many gatherings and also for regular family dinners. It's easy and incredibly delicious. Serves approx. 6 people


Ingredients:

  • 4-6 large zucchini squashes

  • 2 Tablespoons butter (I use unsalted)

  • 1 package of Boursin cheese (I prefer the garlic and chive flavor)

  • 1/4 cup of broth and/or cream (to keep the casserole moist in the oven)

  • 1/4 cup shredded parmesan or white cheese to top

  • Season with salt and pepper as you please (I like using seasoned salt)


Steps:

  • Preheat oven to 350 degrees Fahrenheit

  • Oil an oven safe baking dish

  • Use a spiralizer to make the zucchini into noodles

  • Melt the butter in a saute pan

  • Saute the zucchini in the butter until soft but not mushy

  • Add the Boursin cheese and incorporate throughout the zucchini

  • Season with salt and pepper

  • Add some broth and/or cream

  • Transfer to a corningware or other baking dish

  • Top with the shredded cheese

  • Place in 350 degree oven for about 20 minutes or until cheese is golden and bubbly
